Instructions

  1. Preheat the oven to 300 F and grease two 9x13 inch baking sheets.

  2. Prepare fortunes on paper strips measuring 3 1/2 inches long by 1/2 inch wide.

  3. In a medium bowl, beat the egg white, vanilla extract, almond extract, and vegetable oil until frothy.

  4. In a separate bowl, sift together the flour, cornstarch, salt, and sugar, then stir in water.

  5. Combine the flour mixture with the egg white mixture and stir until a smooth batter forms.

  6. Place level tablespoons of batter onto the prepared baking sheets, spaced 3 inches apart, then gently tilt the sheets to form 4-inch diameter circles.

  7. Bake for 14 to 15 minutes, until the outer half-inch of each cookie is golden brown and easily removable.

  8. Working quickly, remove a cookie, flip it over, place a fortune in the middle, and fold it in half.

  9. Shape the folded cookie by pulling its edges downward over a glass rim or muffin tin edge, then place it in a muffin tin cup to hold its shape. Repeat with the remaining cookies.
