Besan Ki Roti (Bengal Gram Flour Flatbread)

Instructions

Combine all flours and salt in a mixing bowl.

Reserve 6 tablespoons of the flour mixture for rolling.

Form a well in the remaining flour, then gradually add water to mix and knead until a smooth, medium-soft dough forms.

Optionally, add oil for a smoother dough.

Cover the dough and let it rest for 10 to 15 minutes.

Divide the dough into 18-20 equal, golf-ball-sized portions and roll each into a smooth ball.

Flour a clean surface with the reserved flour. Coat one dough ball, flatten it, and roll into a 6-7 inch circle, approximately 1/6 inch thick.

Heat a pan over medium flame and cook one roti, flipping when small bumps appear on the surface.

Flip the roti again when the second side shows light brown spots.

After 10 seconds, use a folded kitchen towel to gently press the edges, encouraging it to puff.

Remove the roti from the pan when puffed. Serve immediately or store in a towel-lined container.
