Bellini Cocktail
A classic sparkling peach cocktail, this beverage combines fresh peaches with sweet, tangy prosecco for an easy-to-sip drink.

Instructions

Blend 4 pitted and quartered white peaches, 3 ice cubes, 1 teaspoon lemon juice, and 1/2 tablespoon sugar (or 3/4 ounce simple syrup) until smooth.

Taste the puree and adjust sweetness or tartness as needed.

Pour 2 ounces of peach puree into a Champagne flute.

Top with 4 ounces sparkling wine or chilled prosecco, stirring gently to combine.

Garnish with a peach slice if desired, and store any remaining peach puree for up to one week.
