Instructions

  1. Preheat the oven to 250 F; heat a waffle iron and prepare a baking sheet with a rack.

  2. Whisk 2 tablespoons light brown sugar, 1 3/4 teaspoons active dry yeast, and 1/2 cup warm water or scaled milk; let stand until foamy for 5 minutes.

  3. Combine 2 1/4 cups all-purpose flour and 1/4 teaspoon salt in a large bowl, then gradually stir in the foamy yeast mixture until shaggy.

  4. Using an electric mixer, beat in 3 large eggs one at a time until combined.

  5. Mix in 1 1/2 teaspoons vanilla extract, then gradually add 1 cup melted butter, mixing until smooth and emulsified (about 1 minute).

  6. Cover the batter and let it rise for 1 hour.

  7. Just before cooking, fold 1 cup pearl sugar into the batter.

  8. Spoon about 2 tablespoons of batter into the waffle iron and cook until golden brown.

  9. Transfer cooked waffles to the prepared baking sheet and keep warm in the oven until serving.
