Instructions

  1. Soak 1 cup spelt grains in water overnight, then drain them. Bring 3 cups water or broth to a simmer in a medium pot, add the drained spelt, and simmer for 1 hour until tender.

  3. Distribute the cooked spelt, shrimp, and sliced beets evenly over the lettuce, then sprinkle with thyme leaves.
