Beet Burger Recipe

Instructions

  1. Preheat the oven to 400 F. Bring 3/4 cup of water to a boil, stir in rice, cover, reduce heat, and cook for 15 minutes until tender; set aside to cool.

  2. Pulse quartered shallot and beet in a food processor until finely chopped. Add black beans and cooled cooked rice, then pulse until mostly pureed but still slightly chunky.

  3. Transfer the mixture to a large bowl and stir in egg, breadcrumbs, chopped parsley, cumin, black pepper, and salt until well combined.

  4. Form the mixture into 4 equal-sized burgers or 8 smaller slider patties.

  5. Place patties on a parchment-lined baking sheet and bake for 15 minutes.

  6. Flip the patties and bake for an additional 15 minutes, or pan-fry them if preferred.

  7. Serve the cooked patties in seeded rolls, topped with arugula and a drizzle of tahini or tzatziki sauce.
