Beer Cheese Soup

Instructions

  1. Melt butter in a heavy-bottomed pot over medium heat, then add chopped carrots, celery, onion, and garlic.

  2. Sauté vegetables with salt for about 10 minutes until softened and slightly browned.

  3. Add chicken broth and thyme to the pot, then blend the mixture until smooth.

  4. Return the puréed mixture to the pot, add beer, and whisk over medium heat.

  5. Whisk in half and half and softened cream cheese until fully incorporated.

  6. Toss shredded cheddar cheese with cornstarch; gradually whisk the coated cheese into the soup until melted.

  7. Simmer the soup for five minutes, stirring frequently, until thickened.

  8. Season with additional salt and pepper as desired.

  9. Serve hot, optionally in bread bowls, and garnish with chopped chives and bacon.
