Beer Batter Hush Puppies

Instructions

  1. Heat 2 inches of peanut or canola oil in a deep pan to 360 F.

  2. Combine cornmeal, flour, baking powder, salt, and sugar in a bowl, then stir in chopped onion, green onions, and optional jalapeño.

  3. Whisk egg with beer in a separate cup, adding optional hot sauce or cayenne.

  4. Pour the beer mixture into the dry ingredients and stir until blended.

  5. Drop rounded teaspoons of batter into the hot oil.

  6. Fry 6-8 hush puppies per batch, turning after 1-2 minutes, until golden brown in 3-4 minutes.

  7. Serve.
