Beer Batter Hush Puppies

Instructions

Heat 2 inches of peanut or canola oil in a deep pan to 360 F.

Combine cornmeal, flour, baking powder, salt, and sugar in a bowl, then stir in chopped onion, green onions, and optional jalapeño.

Whisk egg with beer in a separate cup, adding optional hot sauce or cayenne.

Pour the beer mixture into the dry ingredients and stir until blended.

Drop rounded teaspoons of batter into the hot oil.

Fry 6-8 hush puppies per batch, turning after 1-2 minutes, until golden brown in 3-4 minutes.
