Instructions

  1. Combine all ingredients in a saucepan and heat over low heat, stirring until the salt dissolves and the mixture is smooth and fluid.

  2. Remove from heat and keep the mixture warm enough for injection, ensuring it is not hot.

  3. Fill a marinade syringe and inject the mixture into various meaty portions of the poultry, such as the breast, legs, and thighs.

  4. Aim for the center of meaty sections, injecting about 2 teaspoons per spot, or less if the marinade starts to ooze out.

  5. Season the poultry's exterior and under the skin with your desired rub, then cook according to your recipe.

  6. Discard any unused marinade immediately after use, as it may be contaminated from contact with raw poultry.
