Instructions
-
Start boiling water in a large pot.
-
Slice beef across the grain into 1 1/2-inch pieces.
-
Combine marinade ingredients in a bowl, add beef, cover, and marinate for 15 minutes in the refrigerator.
-
Briefly scald tomatoes in boiling water for 1 minute, then peel and cut each into 4-6 pieces.
-
Diagonally cut celery and spring onions to the same length as the beef slices.
-
Heat a wok over medium-high to high heat with 2 tablespoons of oil. Stir-fry garlic until aromatic, then add beef, browning briefly before stir-frying until 80% cooked; remove beef and clean the wok.
-
Heat the wok with 1/2 tablespoon oil. Stir-fry ginger for a few seconds, then add celery and tomato. Sprinkle with 2 teaspoons sugar and 1/4 teaspoon salt, then cover and bring to a boil.
-
Re-stir the cornstarch/water mixture. Uncover the wok, push tomatoes to the side, then add the cornstarch mixture to the center, stirring quickly to thicken.
-
Return the beef to the wok, mix thoroughly, and adjust seasonings as desired. Serve hot over rice.
