Beef With Tomatoes Recipe

Instructions

  1. Start boiling water in a large pot.

  2. Slice beef across the grain into 1 1/2-inch pieces.

  3. Combine marinade ingredients in a bowl, add beef, cover, and marinate for 15 minutes in the refrigerator.

  4. Briefly scald tomatoes in boiling water for 1 minute, then peel and cut each into 4-6 pieces.

  5. Diagonally cut celery and spring onions to the same length as the beef slices.

  6. Heat a wok over medium-high to high heat with 2 tablespoons of oil. Stir-fry garlic until aromatic, then add beef, browning briefly before stir-frying until 80% cooked; remove beef and clean the wok.

  7. Heat the wok with 1/2 tablespoon oil. Stir-fry ginger for a few seconds, then add celery and tomato. Sprinkle with 2 teaspoons sugar and 1/4 teaspoon salt, then cover and bring to a boil.

  8. Re-stir the cornstarch/water mixture. Uncover the wok, push tomatoes to the side, then add the cornstarch mixture to the center, stirring quickly to thicken.

  9. Return the beef to the wok, mix thoroughly, and adjust seasonings as desired. Serve hot over rice.
