Beef Curry Puffs

Instructions

  1. Preheat oven to 350 F and line two baking trays with parchment paper.

  2. Heat oil in a pan; sauté onions for 3-4 minutes.

  3. Stir in curry powder and cook for 1 minute until fragrant.

  4. Add ground beef, breaking it apart, and cook for 3-4 minutes.

  5. Add cubed potatoes and salt; simmer on medium-low for 20 minutes until potatoes are cooked, then cool for 20-25 minutes.

  6. Defrost puff pastry sheets for 10 minutes.

  7. Whisk one egg in a small bowl.

  8. Cut each puff pastry sheet into four equal squares.

  9. Place a tablespoon of meat mixture on each square's center and brush edges with egg.

  10. Fold each square into a triangle over the filling, seal edges with a fork, and place on prepared baking sheets. Repeat for all pastry and filling.

  11. Brush puff exteriors with remaining egg.

  12. Bake for 20-25 minutes until golden brown.

  13. Cool on the tray for one minute, then transfer to racks; serve hot or cooled.
