Beef Curry Puffs
Savory curry puffs, featuring a spiced ground beef and potato filling encased in store-bought puff pastry, are ideal for serving hot or cold at gatherings.

Instructions

Preheat oven to 350 F and line two baking trays with parchment paper.

Heat oil in a pan; sauté onions for 3-4 minutes.

Stir in curry powder and cook for 1 minute until fragrant.

Add ground beef, breaking it apart, and cook for 3-4 minutes.

Add cubed potatoes and salt; simmer on medium-low for 20 minutes until potatoes are cooked, then cool for 20-25 minutes.

Defrost puff pastry sheets for 10 minutes.

Whisk one egg in a small bowl.

Cut each puff pastry sheet into four equal squares.

Place a tablespoon of meat mixture on each square's center and brush edges with egg.

Fold each square into a triangle over the filling, seal edges with a fork, and place on prepared baking sheets. Repeat for all pastry and filling.

Brush puff exteriors with remaining egg.

Bake for 20-25 minutes until golden brown.

Cool on the tray for one minute, then transfer to racks; serve hot or cooled.
