Beef Consommé

A robust French consommé prepared with ground beef, eggs, and eggshells for a distinctively rich and clarified broth.

Instructions

  1. In a bowl, whisk peppercorns, egg whites, and eggshells until foamy, then set aside.

  2. Pulse tomatoes, celery ribs, and ground beef in a food processor until just incorporated.

  3. Combine the vegetable-beef mixture, egg mixture, veal stock, thyme, and salt in a large stockpot; bring to a boil while stirring constantly.

  4. Once solids form a raft, reduce heat and simmer for 30 to 40 minutes without stirring, ensuring the raft remains intact to prevent cloudiness.

  5. Remove the pot from heat and strain the liquid through a fine-mesh sieve lined with double cheesecloth; discard the solids. Re-strain the consommé if any particles are present.

  6. Serve hot.
