Beef and Celery Stir-Fry With Fresh Garlic

Instructions

  1. Thinly slice the beef across the grain into 1 1/2-inch pieces.

  2. Marinate the beef with soy sauce, cooking wine or sherry, sesame oil, and cornstarch for 15 minutes.

  3. Combine dark soy sauce, rice wine or sherry, water, and sugar in a small bowl; set aside.

  4. Heat a wok or skillet over medium-high heat with 1 1/2 tablespoons oil. Stir-fry garlic for 10 seconds, then add beef, sear, and stir-fry until no longer pink. Remove and drain the beef.

  5. Heat another 1 1/2 tablespoons oil in the wok. Add celery and salt, stir-fry for about 1 minute until brighter green.

  6. Pour in the prepared sauce and bring to a boil. Return the cooked beef to the pan and stir-fry for 1-2 minutes to blend flavors. Serve immediately.
