Beef and Black Beans with Rice

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Cook ground beef and onions, stirring, until the beef is browned.

  3. Stir in bell peppers and garlic; cook for 2 to 3 minutes.

  4. In a small bowl, whisk together lemon juice, mustard, chili powder, soy sauce, cayenne pepper, and all the tomato sauce.

  5. Add this sauce mixture and drained black beans to the skillet.

  6. Simmer for 20 to 30 minutes, then season with salt and pepper to taste.

  7. Serve with hot cooked rice, garnished with cilantro, avocado, or tomato if desired.
