Bay Scallops With Garlic

Instructions

  1. Rinse 1 1/2 pounds bay scallops and pat dry, then lightly coat them in 1/2 cup all-purpose flour, dusting off excess.

  2. Heat 3 to 4 tablespoons olive oil over medium-high heat, then brown the scallops in batches for about 90 seconds, stirring frequently, and set aside.

  3. Return all scallops to the skillet, add 2 cloves minced garlic, salt, and pepper, then cook for 1 1/2 to 2 minutes more, stirring.

  4. Garnish with chopped parsley and lemon wedges, serving immediately with hot pasta or rice.
