Preheat a gas or charcoal grill to medium heat (350°F to 375°F), then clean and oil the grates.

Rinse the fish, pat dry, and season its exterior and cavity generously with salt and pepper.

Mix parsley, basil, rosemary, garlic, and olive oil; divide this herb mixture evenly among the fish cavities.

Place 2 to 3 lemon wheels over the herbs in each fish, close the fillet, cover, and refrigerate for 2 hours.

Grill the fish for 4 to 5 minutes per side.

Continue grilling for an additional 4 to 6 minutes, or until the internal temperature reaches 145°F.

Remove the fish from the grill, transfer to a platter, and serve, optionally garnished with remaining lemon wheels and fresh herbs.
