Instructions

  1. Preheat a gas or charcoal grill to medium heat (350°F to 375°F), then clean and oil the grates.

  2. Rinse the fish, pat dry, and season its exterior and cavity generously with salt and pepper.

  3. Mix parsley, basil, rosemary, garlic, and olive oil; divide this herb mixture evenly among the fish cavities.

  4. Place 2 to 3 lemon wheels over the herbs in each fish, close the fillet, cover, and refrigerate for 2 hours.

  5. Grill the fish for 4 to 5 minutes per side.

  6. Continue grilling for an additional 4 to 6 minutes, or until the internal temperature reaches 145°F.

  7. Remove the fish from the grill, transfer to a platter, and serve, optionally garnished with remaining lemon wheels and fresh herbs.
