Instructions

  1. Preheat the oven to 400 F and line a muffin tin with paper cups or grease it.

  2. Cream together the butter, granulated sugar, brown sugar, and baking soda.

  3. Beat the egg and vanilla in a separate bowl, then add this to the creamed mixture and beat until light and fluffy.

  4. Add the milk, then gradually mix in the whole wheat flour just until combined, avoiding overmixing.

  5. Fill the prepared muffin tins two-thirds full.

  6. Bake for 15 to 17 minutes, or until browned and cooked through.
