Basic Vegetarian Black Beans and Rice

Instructions

  1. Heat olive oil in a large skillet.

  2. Sauté onion and green pepper until crisp-tender.

  3. Stir in tomatoes, beans, thyme, and garlic salt; cook for 3 minutes.

  4. Add vinegar, pepper sauce, and reserved juices; cook for 5 additional minutes.

  5. Serve the black beans over rice, optionally garnished with a lime wedge.
