Instructions

  1. Peel 4 large or 6 medium tomatoes, then cut them into chunks.

  2. In a medium saucepan, heat the tomato chunks over medium-low heat, stirring constantly, until juices release (about 5 minutes).

  3. Reduce heat to low and continue cooking, stirring frequently, for 10 to 15 minutes until desired consistency is reached.

  4. Stir in 1 teaspoon fine salt, 1/8 teaspoon black pepper, 1/4 teaspoon granulated sugar, and 1 tablespoon unsalted butter; adjust seasonings to taste.
