Basic Sofrito

A fundamental, seasoned tomato-based sauce, sofrito is commonly used as a flavor base in Caribbean, Latin American, and Spanish cooking.

Instructions

  1. Chop all ingredients into pieces small enough for a food processor, removing seeds and tough stems.

  2. Place the chopped ingredients into a food processor or blender and process until a fine, thick paste consistency is achieved.

  3. Store the prepared sofrito in a glass container, ready for use in rice, stews, beans, or with proteins.
