Basic Recipe for Fried Rice

Instructions

  1. Beat 2 large eggs with 1/2 teaspoon black pepper and 1 teaspoon salt.

  2. Heat a wok or frying pan over medium-high heat with 1 tablespoon oil; scramble the eggs until lightly cooked, then remove them and clean the pan.

  3. Add the remaining 2 tablespoons of oil to the pan, then stir-fry 4 cups of cooked and cooled rice for a few minutes, breaking it apart.

  4. Stir in 1 to 2 tablespoons soy sauce or oyster sauce.

  5. Return the scrambled eggs to the heated rice, mixing thoroughly.

  6. Stir in 1 to 2 chopped green onions and serve immediately.
