Basic Millet Pilaf Recipe

A simple, naturally gluten-free millet pilaf with a corn-like taste.

Instructions

  1. Heat olive or sesame oil in a 1-quart pan over medium heat.

  2. Add millet and toast for 5 minutes, stirring frequently, until golden and fragrant.

  3. Stir in chopped onion and carrot, cooking for 2 to 3 minutes more.

  4. Add sea salt and water, stir once. Bring to a boil, then cover, reduce heat to a simmer, and cook for 30 minutes.

  5. Remove from heat, allow to stand covered for 5 minutes. Fluff with a fork before serving.
