Basic Mexican Pot Beans

Instructions

Start boiling water in a medium-to-large pot.

Sort and rinse dried beans.

Add the cleaned beans, diced onion, and minced garlic to the boiling water.

Cover and reduce heat to a steady simmer.

Cook beans until soft (approximately 1.5 to 2 hours), adding more boiling water as needed to maintain liquid.

For black beans, add a sprig of fresh epazote a few minutes before removing from heat.

Once beans are fully soft, stir in salt.
