Instructions

  1. Heat a nonstick griddle to 375 F or a large nonstick skillet over medium heat.

  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  3. In a small bowl, whisk egg, oil, nonfat milk, and vanilla extract.

  4. Combine wet and dry ingredients, stirring until just mixed; let the batter rest for 10 minutes.

  5. Pour 1/4 cup of batter per pancake onto the heated surface.

  6. Cook until bubbles appear and edges dry, then flip and cook for 1 to 2 more minutes.

  7. Serve warm.
