Instructions

Heat a nonstick griddle to 375 F or a large nonstick skillet over medium heat.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In a small bowl, whisk egg, oil, nonfat milk, and vanilla extract.

Combine wet and dry ingredients, stirring until just mixed; let the batter rest for 10 minutes.

Pour 1/4 cup of batter per pancake onto the heated surface.
