Basic French Crêpes

Instructions

  1. Preheat oven to 300 F if planning to keep crêpes warm.

  2. Combine flour, eggs, milk, water, melted butter, optional sugar and vanilla, and salt in a blender; blend until smooth, about 20 seconds.

  3. Adjust batter consistency with small amounts of milk if needed, then refrigerate for 30 minutes.

  4. Heat and grease a 9- to 12-inch nonstick pan over medium heat.

  5. After 30 seconds, pour 1/4 to 1/3 cup batter into the hot pan and swirl to coat the surface evenly.

  6. Cook for 30 seconds until the underside is lightly browned.

  7. Flip, cook for another 10 seconds, then remove; place in the warm oven if desired.
