Basic Divinity Candy

Instructions

  1. Combine sugar, salt, corn syrup, and water in a saucepan over medium-high heat; stir until sugar dissolves and bring to a boil.

  2. Insert a candy thermometer and continue cooking over medium-low heat without stirring until the mixture reaches 266 F.

  3. When the syrup reaches 260 F, beat egg whites with an electric mixer at high speed until stiff peaks form.

  4. Once the syrup hits 266 F, slowly pour it into the beaten egg whites while continuously beating with the electric mixer.

  5. Beat for 2-3 minutes until no longer glossy, then add vanilla and continue beating on low speed until the mixture holds its shape.

  6. Stir in pecans or chopped candied cherries using a wooden spoon.

  7. Quickly drop portions of the mixture onto waxed paper using two lightly buttered teaspoons, forming mounded bits. If the mixture becomes too thick, add a few drops of water.

  8. Allow the candy to dry completely before storing in a sealed container at room temperature for up to two weeks.
