Basic Cream of Asparagus Soup

Instructions

  1. Start boiling water for the asparagus.

  2. In a saucepan, melt butter over low heat, then whisk in flour, 1/2 teaspoon salt, and 1/8 teaspoon pepper for 1-2 minutes.

  3. Gradually add milk, stirring until the mixture thickens and begins to bubble; set this white sauce aside.

  4. Wash, trim, and cut asparagus into 1/2-inch pieces.

  5. Cook the asparagus in boiling water for about 5 minutes until tender.

  6. Drain the cooked asparagus, reserving the cooking liquid. Set aside a few asparagus tips for garnish.

  7. Mash or blend the remaining asparagus.

  8. Combine the reserved cooking liquid with enough additional boiling water to make 1 cup.

  9. Add this liquid, the white sauce, and the pureed asparagus to a saucepan.

  10. Heat the soup thoroughly, then season to taste with salt and pepper.

  11. Garnish with the reserved asparagus tips and serve.
