Basic Cream of Asparagus Soup
A comforting cream of asparagus soup features cooked asparagus blended with a rich base of milk, butter, and seasonings, perfect for garnishing with reserved tips, bacon, or ham.

Instructions

Start boiling water for the asparagus.

In a saucepan, melt butter over low heat, then whisk in flour, 1/2 teaspoon salt, and 1/8 teaspoon pepper for 1-2 minutes.

Gradually add milk, stirring until the mixture thickens and begins to bubble; set this white sauce aside.

Wash, trim, and cut asparagus into 1/2-inch pieces.

Cook the asparagus in boiling water for about 5 minutes until tender.

Drain the cooked asparagus, reserving the cooking liquid. Set aside a few asparagus tips for garnish.

Mash or blend the remaining asparagus.

Combine the reserved cooking liquid with enough additional boiling water to make 1 cup.

Add this liquid, the white sauce, and the pureed asparagus to a saucepan.

Heat the soup thoroughly, then season to taste with salt and pepper.

Garnish with the reserved asparagus tips and serve.
