Basic Cooked Mustard Greens

A classic Southern side, these tender mustard greens are braised with pork or bacon and a touch of sweetness, ideal for serving with cornbread and pepper vinegar.

Instructions

  1. Thoroughly wash mustard greens 3-4 times, then remove and discard their stems.

  2. In a large pot, brown 1 pound of fatback, bacon, or ham chunks.

  3. Add the prepared mustard greens to the pot and stir-fry until wilted.

  4. Incorporate 2 cups of water and a teaspoon of sugar, then simmer on medium heat for at least 1 hour until tender, adding more water if necessary and stirring frequently.

  5. Season with salt and black pepper, then serve with cider or hot pepper vinegar.
