Basic Chicken Curry

A flavorful chicken curry can be prepared simply and served with Indian flatbread or rice.

Instructions

  1. Heat oil in a deep skillet over medium heat.

  2. Fry onions until golden brown, then remove with a slotted spoon and drain.

  3. Grind the fried onions into a smooth paste; set aside.

  4. In a food processor, grind tomatoes, garlic paste, and ginger paste into a smooth paste.

  5. Reheat the oil in the skillet, add the onion paste, and fry for 2 to 3 minutes.

  6. Stir in the tomato paste, coriander, cumin, turmeric, red chili, and garam masala to form the masala.

  7. Fry the masala until the oil separates from it.

  8. Add chicken and brown for about 8 minutes.

  9. Pour in 1.5 cups of hot water, simmer, cover, and cook until chicken is tender, about 15 minutes.

  10. Garnish with chopped coriander and serve with Indian flatbread or rice.
