Instructions

  1. Heat milk in a saucepan or microwave until hot.

  2. Melt butter in a separate saucepan over medium heat.

  3. Whisk in flour, cooking constantly for 2 minutes.

  4. Gradually whisk in the hot milk; cook over medium heat, whisking constantly, until the sauce boils and thickens, about 1 minute.

  5. Reduce heat to low, then simmer and whisk frequently for 5 minutes until smooth and thickened.

  6. Season with salt, pepper, and optional nutmeg.
