Bariis Iskukaris - Spiced Somali Rice

Instructions

  1. Wash the rice and soak it in water for at least 10 minutes.

  2. Brown the lamb, then remove it from the pot.

  3. Fry onions until lightly caramelized, about 15 minutes.

  4. Add ground dry spices and garlic to the onions; cook for one minute until fragrant.

  5. Stir in diced tomatoes and cook until they form a thick sauce.

  6. Return the lamb to the pot.

  7. Drain the rice, add it to the pot with 2 1/2 cups water, and bring to a simmer.

  8. Cover the pot tightly and simmer for about 15 minutes, or until all liquid is absorbed.

  9. Fluff the rice with a fork and serve.
