Instructions

  2. Place chicken in a large bowl, pour buttermilk over, cover, and refrigerate overnight.

  3. Combine flour, salt, and pepper in a separate bowl; coat each chicken piece thoroughly after removing from buttermilk.

  4. Heat vegetable oil to a depth of 1 inch to 360 F in a large stockpot.

  5. Fry chicken in batches for about 3 minutes per side until light golden brown, ensuring not to overcrowd; allow oil to return to 360 F between batches.

  6. Transfer fried chicken pieces to a metal baking rack set on a sheet pan.

  7. Bake for 30 to 40 minutes, or until chicken is no longer pink inside. Serve hot.
