Instructions
-
Preheat oven to 375°F.
-
In a small saucepan, combine butter, brown sugar, and corn syrup; cook on low heat, stirring occasionally, for 3 to 5 minutes until butter melts and sugar dissolves.
-
Remove from heat, stir in vanilla and cinnamon, then pour the caramel into a 9x13-inch baking dish, spreading evenly.
-
Layer sliced bananas over the caramel, drizzling with rum if desired.
-
Arrange cubed bread evenly over the bananas.
-
In a medium bowl, whisk together eggs, milk, granulated sugar, melted butter, vanilla, and salt until well beaten.
-
Pour the egg mixture over the bread cubes, pressing to submerge.
-
Cover the dish with foil and refrigerate for at least 5 hours or overnight. Let casserole reach room temperature while oven preheats.
-
Bake covered for 45 to 60 minutes, or until the egg mixture is set. For a crunchy top, remove foil for the last 5 to 10 minutes.
-
Remove from oven. Serve topped with additional caramel, sliced banana, and whipped cream, or invert onto a plate to display the caramelized bananas, then top as desired.
