Instructions

  1. Preheat oven to 375°F.

  2. In a small saucepan, combine butter, brown sugar, and corn syrup; cook on low heat, stirring occasionally, for 3 to 5 minutes until butter melts and sugar dissolves.

  3. Remove from heat, stir in vanilla and cinnamon, then pour the caramel into a 9x13-inch baking dish, spreading evenly.

  4. Layer sliced bananas over the caramel, drizzling with rum if desired.

  5. Arrange cubed bread evenly over the bananas.

  6. In a medium bowl, whisk together eggs, milk, granulated sugar, melted butter, vanilla, and salt until well beaten.

  7. Pour the egg mixture over the bread cubes, pressing to submerge.

  8. Cover the dish with foil and refrigerate for at least 5 hours or overnight. Let casserole reach room temperature while oven preheats.

  9. Bake covered for 45 to 60 minutes, or until the egg mixture is set. For a crunchy top, remove foil for the last 5 to 10 minutes.

  10. Remove from oven. Serve topped with additional caramel, sliced banana, and whipped cream, or invert onto a plate to display the caramelized bananas, then top as desired.
