Instructions

  1. Preheat oven to 350 F (180 C) and grease an 8x4-inch loaf pan.

  2. Beat butter and sugar until pale and fluffy, then gradually add eggs, beating after each addition.

  3. Fold in vanilla extract, mashed bananas, and yogurt.

  4. Sift together flour and baking powder, then fold into the banana-yogurt mixture until just combined, avoiding overmixing.

  5. Spoon mixture into the greased pan and bake for 50-60 minutes, or until a skewer comes out clean.

  6. Remove from oven, let stand in pan for 5 minutes, then turn out onto a wire rack to cool completely.
