Instructions

  1. Preheat oven to 350 F and line a 12-cup muffin tin with paper cups.

  2. Combine flour, rolled oats, sugar, baking powder, baking soda, and salt in a large bowl; set aside.

  3. In a separate bowl, beat the egg, then stir in milk, oil, vanilla, and mashed banana.

  4. Gently combine the dry ingredient mixture with the banana mixture until just moistened.

  5. Spoon the batter into the prepared muffin cups.

  6. For the crumble topping, stir oats and cinnamon, then cut in butter until crumbly.

  7. Sprinkle the topping over the muffin batter and bake for 20 to 22 minutes, or until a toothpick comes out clean.
