Preheat oven to 350 F and line a 12-cup muffin tin with paper cups.

Combine flour, rolled oats, sugar, baking powder, baking soda, and salt in a large bowl; set aside.

In a separate bowl, beat the egg, then stir in milk, oil, vanilla, and mashed banana.

Gently combine the dry ingredient mixture with the banana mixture until just moistened.
