Banana Cupcakes With Cream Cheese Frosting

Instructions

  1. Preheat oven to 350 F.

  2. Line 16 cupcake tin compartments with paper liners and spray them.

  3. In a large bowl, use an electric mixer to combine bananas, butter, and both sugars. Beat in eggs one at a time, then blend in sour cream and vanilla.

  4. In a separate medium bowl, mix flour, baking soda, and salt. Gradually blend this flour mixture into the wet ingredients in three batches, mixing until just incorporated.

  5. Fill each cupcake liner almost to the top with batter.

  6. Bake for about 25 minutes, or until a wooden skewer inserted into a cupcake comes out clean.

  7. Cool cupcakes in the pan on a wire rack for 15 minutes, then remove and finish cooling on the wire rack.

  8. While cupcakes cool, prepare the cream cheese frosting: Blend cream cheese, butter, vanilla, and salt. Gradually add confectioner's sugar, mixing until smooth.

  9. Frost cupcakes once fully cooled.
