Instructions

  1. Preheat oven to 375 degrees F and melt butter.

  2. Mix cocoa and hot water with melted butter; set aside to cool.

  3. Sift flour, sugar, baking powder, cinnamon, and salt into a large bowl.

  4. Whisk milk, egg, and vanilla extract in a small bowl.

  5. Mash 2 medium ripe bananas to yield about 3/4 cup.

  6. Stir mashed bananas and the cooled chocolate mixture into the milk mixture.

  7. Combine the wet and dry ingredients, stirring just until blended.

  8. Fold in chocolate chips.

  9. Fill 12 paper-lined muffin cups with batter. Bake 22 to 25 minutes until muffin tops spring back when lightly pressed.

  10. Dust muffin tops with confectioners' sugar.

  11. Serve warm or at room temperature.
