Banana Cake With Banana Frosting

A spiced banana cake, infused with cinnamon, nutmeg, and allspice, is complemented by a rich banana buttercream frosting.

Instructions

  1. Preheat the oven to 375F; grease and line 2 (9-inch) cake pans with parchment paper.

  2. Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.

  3. Cream butter and granulated sugar until light and fluffy.

  4. Beat in eggs one at a time, then add vanilla.

  5. Alternately add the sifted dry ingredients and mashed bananas, beating well after each addition.

  6. Pour batter into prepared pans and bake for 20-25 minutes, or until the cake springs back when lightly touched.

  7. Cool in pans for 10 minutes, then transfer to racks, remove parchment, and cool completely.

  8. For the frosting, cream butter and salt.

  9. Combine mashed banana and vinegar in a separate bowl.

  10. Alternately beat the banana mixture and sifted confectioners' sugar into the creamed butter until fluffy.

  11. Frost the cooled cake, stacking the two layers with frosting in between.

  12. Garnish with chopped, toasted pecans if desired.
