Instructions

  1. Soak okra for at least one hour in a mixture of water, white vinegar, and 1 tablespoon salt, then drain and dry the pods.

  2. In a large pot, heat olive oil over medium-high heat, then sauté onion until translucent, about 5 minutes.

  3. Add garlic and sauté for 1-2 minutes until fragrant.

  4. Stir in the okra, tomato sauce, parsley, and water. Cover and simmer over medium-low heat for 30-40 minutes until tender, adding more water if necessary.

  5. Season with salt and pepper to taste and serve.
