Combine olive oil, balsamic vinegar, garlic, rosemary, honey, mustard, oregano, salt, and pepper in a bowl.

Place lamb chops in a dish or bag, pour marinade over them, coat evenly, and refrigerate for 1-2 hours.

Preheat the grill to medium-high heat.

Remove chops from marinade, discard marinade, and place chops on grill grates.
