Balsamic and Rosemary Marinated Pork Loin Roast

Instructions

  1. Preheat the oven to 350 F.

  2. Whisk together salt, pepper, rosemary, ketchup, balsamic vinegar, garlic, and olive oil in a small bowl to make the marinade.

  3. Place pork in a freezer bag, add marinade, seal, and marinate for 3 hours.

  4. Transfer pork and marinade to a baking dish, season with salt and pepper, and add 1/2 cup water.

  5. Roast for about 1 hour, basting occasionally, until pork reaches an internal temperature of 145 F to 150 F.

  6. Remove pork, let rest for 10 minutes, then slice and serve with drizzled marinade.
