Instructions

  1. Preheat the oven to 425 F.

  2. To make the syrup, boil 4 cups water with sugar, vanilla extract, and lemon juice in a large saucepan, then reduce heat and cook for 10-15 minutes; cool completely and divide into two large bowls.

  3. For the dough, melt butter in 1 1/2 cups water in a medium saucepan.

  4. Stir in flour and salt until a dough mass forms that cleans the pan.

  5. Beat in eggs one at a time until the batter is smooth.

  6. Line a sheet pan with parchment paper.

  7. Pipe 12 (5-inch) lengths of dough onto the pan using a pastry bag with a large star tip.

  8. Bake for about 20 minutes until golden brown and puffed.

  9. Place hot pastries into the two bowls of cooled syrup, ensuring they are fully coated.

  10. Soak overnight and serve cold.
