Balkan Feta-Cream Cheese Pie (Burek sa Sirom)

A savory Balkan pie, Burek sa sirom features flaky filo dough encasing a rich feta and cream cheese filling, perfect as a vegetarian main course or appetizer.

Instructions

  1. Preheat the oven to 375 F.

  2. In a large bowl, mix feta cheese, cream cheese, eggs, parsley, and dill.

  3. Divide filo dough into two piles of 24 sheets, cut each sheet in half for 48 leaves per pile, and keep them covered.

  4. In a small bowl, combine melted butter and olive oil; brush 6 (8-inch) round shallow pans with this mixture.

  5. For each pie, layer two filo sheets in a pan, brush with butter-oil, repeat with two more sheets, and brush again.

  6. Evenly spread 1/6 of the cheese mixture over the layered filo.

  7. Top with two filo sheets, brush, repeat with two more sheets, then tuck the edges and brush generously.

  8. Bake pies for 20 to 30 minutes until golden brown.

  9. Serve warm or at room temperature.

  10. Unbaked pies can be frozen and baked directly from frozen, increasing bake time by at least 15 minutes.
