Instructions

  1. Preheat oven to 300°F.

  2. To make the syrup, combine 4 cups sugar, lemon juice, and water in a saucepan; boil for 10 minutes. Stir in rosewater, bring to a boil, then remove from heat and let cool completely.

  3. For the filling, mix 1/2 cup sugar and nuts in a bowl, adding cinnamon if using walnuts.

  4. Grease a 9x12 inch baking pan with butter. Unroll phyllo dough and cut to fit the pan.

  5. Layer two phyllo sheets in the pan, brush with butter, and repeat until half of the dough is used.

  6. Spread 1 cup of the nut mixture evenly over the last dough layer.

  7. Continue layering two phyllo sheets, brushing with butter, until all nut mixture is incorporated. Brush the top phyllo layer with butter.

  8. Cut the baklava into 3-inch squares, then halve each square diagonally to form triangles.

  9. Bake for 75 minutes, or until golden brown.

  10. Remove from oven and immediately pour the cooled syrup over the hot baklava.
