Instructions

  1. Preheat oven to 350°F and grease a 2-quart baking dish.

  2. In a large bowl, combine zucchini, tomatoes, chopped onion, minced garlic, salt, basil, and pepper; toss well, then drizzle with olive oil and toss again.

  3. Transfer the vegetable mixture into the prepared baking dish.

  4. Bake for 25 minutes.

  5. Sprinkle with fontina and Parmesan cheeses, then bake for another 10 to 15 minutes.
