Baked Whole Trout With Lemon And Dill

Whole baked rainbow trout is simply flavored with dill, lemon, and paprika.

Instructions

  1. Preheat oven to 475 F. Line a shallow baking pan with foil and insert a baking rack.

  2. Rinse fish inside and out, then pat dry.

  3. Slice one lemon into thin rounds.

  4. Sprinkle fish cavities with salt, lemon pepper, garlic powder, and onion powder.

  5. Stuff 2-3 dill sprigs and half of the lemon slices into the fish cavities.

  6. Spray fish skin with cooking spray.

  7. Place fish on the rack. Arrange remaining dill sprigs and lemon slices over the fish, then sprinkle with paprika.

  8. Pour wine into the pan beneath the rack.

  9. Bake for 25-30 minutes, until the fish flakes easily.

  10. To serve, sprinkle fillets with paprika and garnish with remaining lemon wedges and a dill sprig.
