Baked Whole Fish in Garlic-Chile Sauce
A versatile Thai-inspired whole fish can be prepared either baked and broiled indoors or barbecued outside.

Instructions

Preheat the oven to 375°F or heat a grill to medium, then combine all sauce ingredients in a bowl.

Score the fish by making vertical cuts one inch apart along both sides.

For baking: Place fish on large aluminum foil or a banana leaf. Drizzle at least 3 tablespoons of sauce over the fish, covering scores and cavity; reserve the rest. Loosely tent with foil or tightly wrap in a banana leaf (use a tray for the leaf).

Bake for 20 minutes, checking for doneness and continuing for 8-10 minutes if needed. Open the wrapping, pour remaining sauce over the fish, and broil for 5-8 minutes until browned.

For grilling: Brush the grill or fish cage with oil. Drizzle at least 3 tablespoons of sauce over the fish, covering scores and cavity. Grill for 10-20 minutes, turning after at least 5 minutes, until the fish is opaque. Baste with remaining sauce while grilling or pour over before serving.

Finish by sprinkling the fish with fresh coriander and basil, then add lemon or lime slices.
