Baked Vegetarian Samosas

Vegetarian samosas are a versatile Indian snack or entree, easily prepared with spiced potatoes and peas wrapped in phyllo pastry.

Instructions

  1. Preheat the oven to 400 F.

  2. Sauté onions in oil over medium-high heat until soft, about 6 to 8 minutes.

  3. Stir in coriander, cumin, and cayenne, and cook for another minute.

  4. Remove from heat, then mix in potatoes, peas, and cilantro; season with salt and pepper.

  5. Stack 3 or 4 phyllo sheets, slice into 4 even rectangles, and cover the remaining phyllo.

  6. Place 2-3 tablespoons of the potato and pea mixture in a corner of the dough, roll towards the center, fold in the side corners, and roll up again to form a triangle; repeat until all pastry dough is used.

  7. Arrange samosas on a baking sheet, lightly brush tops with olive oil, and bake for 20 minutes or until lightly golden brown.
