Baked Vegetarian Samosas
Vegetarian samosas are a versatile Indian snack or entree, easily prepared with spiced potatoes and peas wrapped in phyllo pastry.

Instructions

Preheat the oven to 400 F.

Sauté onions in oil over medium-high heat until soft, about 6 to 8 minutes.

Stir in coriander, cumin, and cayenne, and cook for another minute.

Remove from heat, then mix in potatoes, peas, and cilantro; season with salt and pepper.

Stack 3 or 4 phyllo sheets, slice into 4 even rectangles, and cover the remaining phyllo.

Place 2-3 tablespoons of the potato and pea mixture in a corner of the dough, roll towards the center, fold in the side corners, and roll up again to form a triangle; repeat until all pastry dough is used.

Arrange samosas on a baking sheet, lightly brush tops with olive oil, and bake for 20 minutes or until lightly golden brown.
