Baked Swordfish Steaks

Instructions

  1. Preheat the oven to 400 F.

  2. Prepare vegetables: thinly slice mushrooms and onion, dice celery, and dice half a bell pepper.

  3. Heat olive oil in a skillet over medium heat. Sauté the sliced mushrooms and onion with diced celery and bell pepper for 8 to 10 minutes until tender.

  4. Stir lemon juice, salt, and pepper into the sautéed vegetables.

  5. Lightly grease a shallow baking pan. Spread half of the vegetable mixture on the bottom, then arrange swordfish steaks over it.

  6. Season swordfish steaks with Creole seasoning and place a bay leaf on each.

  7. Halve grape tomatoes and scatter them over the swordfish. Top with the remaining vegetable mixture and drizzle with water or broth.

  8. Cover the pan tightly with foil and bake for 20 to 25 minutes, or until the fish reaches 145 F.
