Baked Sweet Potato Custard

Instructions

  1. Preheat the oven to 350 F and butter 6 custard cups, arranging them in a large baking pan.

  2. Heat the milk until very hot.

  3. Lightly beat the eggs, then incorporate the sweet potato, sugar, cinnamon, nutmeg, cloves, ginger, and salt.

  4. Whisk in the warm milk until well blended, then pour the mixture into the prepared custard cups.

  5. Heat 5 to 6 cups of water until steaming.

  6. Place the baking pan with custard cups in the hot oven and carefully fill the pan with the hot water until it reaches halfway up the sides of the cups, preventing water from entering the custards.

  7. Bake for 25 to 30 minutes until the edges are firm.

  8. Immediately remove the custard cups from the water bath, cool on a wire rack, then cover and refrigerate for at least 1 hour before serving.
